ANNA’S PEANUT BUTTER ENERGY BALLS

These Peanut energy balls are so delicious; we’ve been obsessed with them in the office recently.

So if you’re looking for an easy on-the-go snack to power you through the weeks, these are a great option and Anna’s go-to snack ! They take just ten minutes to make and each one only needs six simple ingredients.

INGREDIENTS 

90g (1 cup) rolled oats

130g (2 big tbsp) peanut butter – Anna uses crunchy

2 tbsp honey

1 tbsp chia seeds

Handful cocoa nibs

Desiccated coconut to roll with at the end

Method

Mix all the ingredients in a bowl till smooth and you can roll into little balls

Add a little more honey if its to dry and then roll in the desiccated coconut

pop into a box and keep in the fridge

 

Warning: these are seriously yummy, try not to eat all in one sitting
